Summer Selection

 Grandma Jo's Refrigerator Pickles

 Serves: 7-10 as a side.

 Ingredients: 7 c. cucumbers, sliced thin

 2 large onions, sliced thin

 2 large bell peppers (red, green, yellow...pick your favorite)

1 Tbsp. kosher salt

 1 Tbsp celery salt

 2 c. sugar

 1 cup cider vinegar

 2 cloves garlic

 sliced 1 small hot pepper (optional)

 Method: Boil salt, celery seed, sugar and vinegar, remove and cool. Pour vinegar mixture over pickles, oions, garlic and peppers, and let stand for one hour, stirring occasionally. Refrigerate for 12-hours before using. Store in the refrigerator or may be frozen in small containers or freezer bags. They stay crisp even after freezing. Enjoy! Have a great summer!
